Hearty Massaged Kale Salad

INGREDIENTS:
2 big bunches of kale (1 purple & 1 green)
1 bunch parsley
Chopped baby portabella mushrooms
Shaved carrots
Chopped cherry tomatoes
3 green onions
Pine nuts
Fresh lemon juice
Olive oil
Salt
Pepper
DIRECTIONS:
1. Pull the kale leaves off the steams and chop into bite size pieces.
2. Put chopped kale into large bowl and drizzle lemon, olive oil and salt over kale. Massage with hands for about 5 minutes. Kale has a different taste depending on how long you massage it.
3. Toss dressing (I used Sunflower Seed Pesto Dressing) in with massaged kale and mix thoroughly.
4. Toss chopped vegetables and nuts in and gently toss.
5. Season with fresh salt and pepper.
This is so delicious! I made a huge bowl of it so I can have leftovers. It tastes even better the next day. Remember, it is so important to get leafy green vegetables as they are LOADED with nutrients. Make this salad and let me know what kind of goodies you tossed in yours!!
