Healthy Raw Caramel

My Favorite New Raw love is Caramel. I love this stuff, its sweet and its super easy to make not to mention Bella still really thinks this is the caramel you get from McDonalds that go with apple dippers. If Bella likes it, its good.
Raw Caramel
1 C Dates (medjool are best)
1/4 C Agave (optional)
1 Lemon
1t Coconut oil (if you don’t have it don’t worry, make it w out it will still taste good)
1 C Distilled water
Put dates in a bowl and soak them in water, squeeze juice of lemon into the bowl as well. Let soak for an hour in Lemon Water.
Reserve soak water
Put Dates, coconut oil, and agave in food processor (or vitamix) slowly add in the soak water until you acheive the texture of caramel that you want. (for me thats usually a few T’s)
*** Eat with Sliced pears, apples, banana, or pineapple. My favorite is pears!
I . Love. Dates. My dad brought me a case of medjool dates from a middle eastern grocer a few months ago, it was a 5lb box. I ate the whole box in 5 days. I’m all for eating as much raw food as you want, I believe if your really craving something raw, you really need it! I’ve gone through phases like this where I I’ve eaten lbs of dates at a time, 4 avocados in one day or even broken open 3 Thai coconuts within a couple hours. (The coconut opening was quite a site. By the third coconut I was trying to drill it open with a power drill. Just a note: You can’t open them with a power drill) The longer I eat raw the more I realize what my body is really craving. Of course Dates, Avocados and coconuts are delicious but more over I think my body really needed the potassium from dates and coconuts and maybe the good fat from avocados. I think I’ve finally got enough potassium in me now since I don’t crave those things anymore. Never underestimate your good cravings.

I have a recipe in my "pre-raw" file that was delicious...called banana caramel pie. I wonder if there is some way to make a raw nut crust...spread the caramel on top and top it with fresh, ripe bananas, then sprinkle with nuts and coconut? YUM! thanks for sharing!
