Kale Chips

Kale Chips

Ingredients:

2 head Kale, Washed and Torn
¾ cup Tahini
¼ cup Braggs Liquid aminos
1/4 cup Cider Vinegar
½ cup Water
2 scallions
1 clove garlic
1 lemon (juice of)
¼ teaspoon Sea Salt
1/4 cup of nutritional yeast

Preparation:

Place kale in a large mixing bowl. Combine the rest of the ingredients in a blender and blend until smooth to get a thick consistency. You may have to add more water. Pour over kale and mix thoroughly with your hands to coat the kale. You want this mixture to be really glued onto the kale.

So as you can probably tell by now i’m not the kind of raw gal that just eats salads all week. I enjoy food and I’m actually starting to enjoy cooking.. I mean “UNcooking” and quite frankly i’ve realized to stay Raw Vegan you inevitably have to become creative. So one thing thats been missing from my raw diet is a good go-to raw salty snack.. so here’ my stab at Raw Corn chips and Nacho cheese. Of course made as easily as possible, bc well.. thats just how I try to do things.

Corn Chips

Stuffed Mushrooms

14 med. to large mushrooms
1/4c. quinoa that has been soaked for 4-6 hrs
1 whole tomato finely chopped... See More
1 c. chopped cilantro
2 whole avacados mashed
1/2 purple onion finely chopped
6-8 medium radish finely chopped
2-3 cloves garlic minced
mushrooms stems finely chopped
2 tbs. olive oil
3 tbs lemon juice
salt, pepper, cumin to taste
Wash and dry mushrooms. Remove stems chop and set aside. In a large bowl combine all of the ingredients, mix until blended. Salt, pepper and cumin to taste. Enjoy!
